Carrot, Corn and Pork Bone Soup
Overview
Today I made a simple carrot, corn and pork bone soup. Even though it is summer, this broth with carrots and corn added is not greasy. Instead, because of the sweetness of carrots, corn and red dates, the soup is sweet and delicious, with a delicious aftertaste. Pork bones provide high-quality protein and fat necessary for human physiological activities, and the rich calcium can maintain bone health; carrots are rich in vitamin A and vitamin C, which can enhance the vitality of the liver, kidneys, and gonads; corn is rich in carbohydrates, vitamin A, vitamin B, and vitamin C, which have antipyretic and diuretic effects. In addition, red dates can replenish qi, nourish blood and calm the nerves. One pound of pork bones, soak in water for one hour, change the water three times to remove the blood. If the pork bones are very fresh, you don’t need to blanch them. Cook for two or three minutes, remove the blood foam and dirt, remove the pork bones, wash and drain and set aside

Put enough water in the casserole, add pork bones, green onion knots, ginger cubes, a little cooking wine, bring to a boil over high heat, turn to the lowest heat and simmer for an hour

While stewing, prepare other side dishes, cut carrots into large hob pieces, and chop corn into small pieces

After simmering the pork bones for an hour, add corn and red dates and continue simmering
