This Western-style mashed potato is made for my precious grandson. The baby is almost one year old. In the later period of complementary feeding, he can eat a lot more things. He can eat some fish, shrimp and meat in an appropriate amount, but the taste must be light. In order to make the baby's food more delicious under the basic principle of lightness, I use my brain to think of ways every day. I always want to take into account both nutrition and deliciousness, and I have to constantly innovate the food to prevent the baby from getting tired of it. This mashed potato is one of them. The Western-style mashed potato allows my baby to adapt to various tastes of food since he was a child. Who gave him a grandma who can cook, haha. They say they are kissing each other, and this is absolutely true. To be honest, when I had my son, I never spent so much effort. Watching the baby change day by day, it feels so beautiful to be a grandma. When the baby is well fed, he will grow strong and even before he is one year old, he can already run around the house on his own. I also have a sense of accomplishment. I enjoy the happiness of having children and grandchildren around my knees, and I am immersed in the happiness of being busy every day.

Chop the onion, ginger and parsley into fine pieces, soak them in water to get the fragrance, then put the peeled shrimps in and soak them for 10 minutes, then take out the shrimps

Bring the water in the pot to a boil, turn down the heat, add the shrimps, blanch them over low heat until cooked, remove the shrimps and set aside

In addition, cut the small rapeseed and blanch it in boiling water until cooked. The emerald color depends on this green vegetable. The amount of water is about half of a small bowl. Because this water is used to stir the potatoes, just add the required amount, not too much.

Finally, peel and cut the cooked potatoes into cubes, add them to the cooked vegetables together with the shrimp and rice. Adding a little bit of rice will make the mashed potatoes taste more delicate. I used 4 shrimps, leaving one for decoration
