Clean the yellow croaker and make three cuts on both sides of the fish's back. Cut onion, ginger and garlic into small pieces.

Heat the pan, pour in oil, add onion, ginger and garlic and stir-fry until fragrant. Turn to low heat, add fish, and lightly fry both sides with oil. Pour in peppercorns, aniseed, salt, soy sauce, sugar, rice vinegar, cooking wine, and simmer briefly.

Put water in the pot, no more than the fish body, bring to a boil over high heat, then turn to low heat and simmer.

Simmer until the soup is almost dry, then turn to high heat to reduce the juice.

Collect the dried soup and serve on a plate.
