How to cook Peacock fish at home

  1. Remove the head and tail of the fish and cut it into 1cm thick fillets (my knife is not easy to use, so I cut it with cooking shears)

  2. Add salt, a small spoonful of steamed fish soy sauce, green onion, ginger, garlic and cooking wine in a basin, stir well and marinate for 20 minutes

  3. Take out the marinated fish, put the onion, ginger and garlic in the marinade into the bottom of the plate. Arrange the fish in a shape with small size on both sides and large size in the middle. Pour cold water into the pot. Steam for 8 minutes and then turn off the heat and simmer for 2 minutes

  4. Take a small bowl and pour the remaining steamed fish soy sauce, add starch and oyster sauce. When steaming the fish, do not throw the steamed fish soup into the bowl and mix well. Heat it up with a large spoon and pour in the sauce to thicken it. Then pour it on the steamed fish. Heat an appropriate amount of hot oil in another pot and pour it on the fish. You can add an appropriate amount of coriander and red pepper for garnishing
