Remove the impurities from the chicken gizzards and rinse them thoroughly.

Blanch in a pot of boiling water to remove odor.

Put the old brine in the pot, add bay leaves, dried chili peppers, star anise, Sichuan peppercorns, green onions and ginger.

After the brine in the pot boils for 5 minutes, add the chicken gizzards.

After boiling, turn to low heat and cook for about 30 minutes. Soak the chicken gizzards in the soup for several hours to absorb the flavor.
