Meaty Cowpeas
Overview
Freshly picked cowpeas are boiled in boiling water until cooked but not rotten, drained, and dried in the sun; soaked in cold water until soft and set aside for later use. They are sweet and delicious, with endless aftertaste.

Soak the dried beans in advance.

Wash and cut into sections.

Pork is cooked with aniseed and Sichuan peppercorns.

Cut the meat into thin slices.

Dice green onion and slice ginger. Set aside.
