Triple Chocolate Soft Cookies
Overview
Foodies who like chocolate will definitely fall in love with this cookie. There are mellow dark chocolate and sweet white chocolate. The edges are crunchy and the middle is soft and chewy. It is perfect for afternoon tea with coffee. What’s even better is that this cookie is really simple. Maybe the most difficult part is cutting the chocolate. Haha.

Preheat the oven to 176 degrees Celsius, soften the butter at room temperature and beat it into pieces, add brown sugar and white sugar and mix well

Add eggs and vanilla extract and mix well

Sift low-gluten flour and cocoa powder together, add baking powder and salt and mix well

Add 3 to 2 and mix evenly with a rubber spatula

Chop dark chocolate and white chocolate, or use processed chocolate beans directly

Add the chocolate to the batter and mix carefully with a rubber spatula until even

Divide the batter randomly on the baking tray, just use two spoons, just make sure to leave enough space between each portion. Bake in the oven for about 8 minutes and then transfer to a rack to cool. The finished cookies will be crispy on the edges and soft in the middle. If you want a crispier texture, you can extend the baking time appropriately
