Grass carp cleaned

Cut in half into two sections; make three cuts on both sides, spread a layer of salt and marinate for 5 minutes;

Heat oil in a pot and saute ginger slices until fragrant

Add the fish segments, flip them over without haste, and fry until crusts form

Flip to the other side and fry until crusty

Pour in an appropriate amount of water, add light soy sauce, dark soy sauce, cooking wine, rice vinegar, pepper, and white sugar

Heat over high heat, pouring the soup onto the surface of the fish. When the soup thickens, add the coriander segments, turn off the heat and serve on a plate
