Jiao Liu Meatballs
Overview
Jiaoliu meatballs are a traditional dish from Shandong. They are very delicious and go well with rice. The Jiao Liu meatballs are fried first and then fried. They taste charred on the outside, tender and juicy on the inside, and have a beautiful color. Wash and peel the water chestnuts. Cut into small cubes.

Cut green onions and ginger into fine pieces and set aside. (Save a little for making jiaoliu meatballs).

Wearing disposable gloves, grab an appropriate amount of meat filling with your left hand, squeeze out the meatballs from the tiger's mouth between your thumb and index finger, and scoop them out with a spoon dipped in water.

Heat oil in a pot until about 60 degrees. Gently put it in along the edge of the oil pan (you can turn to low heat at this time).

Add vinegar, sugar, light soy sauce, dark soy sauce diluted sauce and water and bring to a boil.
