Blanch the stick bones in a pot of boiling water.

Put the blanched stick bones into the pressure cooker and pour boiling water to level with the stick bones. Add onions, ginger, peppercorns, star anise, bay leaves, light soy sauce, dark soy sauce, sugar, soybean paste, cooking wine, and vinegar. Cover and press for 30 minutes. After pressing, turn the stick bones over and press for another 10 minutes.

Take out the stick bones and eat them. The remaining broth can be used to stew potatoes and beans.
