Braised pork and diced potatoes

Not super complex but super delicious. It goes really well with white rice.

Cut the skin-on pork belly into cubes. Put water, two pieces of green onion, and two slices of ginger in the pot. Boil the water. Put the meat in the boiling water for about 2 minutes and take it out. Set aside.

Pour a little oil into the pot. When the oil is hot, add the drained diced meat and stir-fry. Reduce the heat to low and stir-fry for a while. Add onions, ginger, bay leaves, star anise, cinnamon, and rock sugar, and continue to stir-fry for a while.

Add the braised soy sauce and continue to stir-fry until fragrant

Add water to cover the meat, about twice as much as the meat, bring to a boil over high heat, and add a little salt. Reduce heat to low and simmer for one hour.

Add the potatoes, bring to a boil over high heat and continue to simmer over low heat.

Add a few hard-boiled eggs. You can use a knife to make a few slits in the eggs to add flavor.

Make sure to turn the potatoes several times to prevent them from sticking to the pan. Finally, if you feel it's not salty enough, you can add a little more salt. Get out of the pot!
