Double Mushroom Tomato Tofu Soup

I still have mushrooms and enoki mushrooms at home, so I can make a double mushroom, tomato and tofu soup!

Cut off the roots of the enoki mushrooms, wash them with water and tear them into small pieces.

Cut the tofu into small pieces.

Cut tomatoes into small pieces.

Wash the mushrooms.

Squeeze out the water and tear into strips.

Chop green onions.

After the oil in the pot is hot, add the chopped green onion and saute until fragrant.

Add tomatoes and stir-fry.

Fry until the tomatoes turn into puree, add the mushrooms and stir-fry.

Add water and cook.

Add tofu and cook together.

After the water boils, add the enoki mushrooms and cook for a while.

Add salt, pepper, chicken essence, sesame oil, and a little sugar to taste.

Serve in a bowl.
