Since I don’t have a small scale, I estimated the dosage myself. It’s just that we don’t have small red dates at home, so we can only use large red dates instead. Small red dates are better.

After soaking, the white fungus will be very big and you can’t control the amount, so it is recommended to soak it one by one! Then cut the white fungus into small pieces as much as possible.

First, boil a pot of water over high heat. After the water boils, add the longan and red dates. The longan needs to be cooked for a longer time so that the flavor comes out. If there are small red dates, you don’t need to put them in so quickly. You can add the small red dates after adding the white fungus.

Cook over high heat for 10 minutes, remember to add a little more water! The longan is so fragrant after boiling! The longan must be boiled so well that the white fungus can be added. I believe everyone knows the role of longan, so I won’t be wordy here~hehehe~·

Slowly put the freshly prepared white fungus into the rolling pot.

Stir it with a spoon and bring to a boil over high heat before closing the lid.

Simmer over medium heat for 20 minutes. Pay attention to see if there is any leakage. If it leaks easily, simmer over low heat for 30 minutes.

After 20 minutes, add rock sugar. Polycrystalline rock sugar is better than single crystal rock sugar because it has some medicinal properties.

Then add an appropriate amount of water to avoid burning it.

Simmer over low heat for 30 minutes. When the white fungus melts and the soup becomes thicker, it will be like a soup.

After turning off the heat, do not pour out the white fungus and let it cool naturally in the pot.
