King mushroom egg box
Overview
This cake is also made to add freshness to my children. King mushroom, my mother used it to make dumplings, but it was filled with meat. My kids don’t eat meat, so I tried adding eggs to make it vegetarian. The child took a bite and couldn't tell what the filling was, but said it was delicious. It seems that it was successful again this time. I have another magic weapon to deal with picky children, haha.

Prepare the fermented dough.

Prepare king oyster mushrooms, eggs and green onions.

Tear the king oyster mushrooms into long strips and blanch them in a pot until soft.

Remove and squeeze out the water.

Chop into coarse pieces.

Fry the eggs and let cool.

Chop the green onions and cilantro into small pieces and set aside.

Add king oyster mushrooms, eggs, coriander and green onions with appropriate amount of salt, oil, sesame oil and fresh chicken juice and mix thoroughly and set aside.

Knead the dough evenly and divide into sections of about 100 grams each.

Take a piece of dough, roll it out thinly, and cut it at the three o'clock position.

Spread filling on top.

Start folding in half from one corner.

Fold again.

Finally, fold it into a half-fan shape, press the edges tightly and use a fork to press on the lace.

Heat an appropriate amount of oil in the pan and add the box cake.

Lower to medium heat, cover and simmer slowly.

Once one side is browned, flip it over until cooked through.
