Wash the grapefruit thoroughly: first wash it after eating and soak it, then rub it with fine salt, and finally rinse it with hot water of about 60 degrees;

Use a spatula to scrape off the grapefruit skin. The thinner the skin, the better. Try to bring out as little white part as possible;

Cut the scraped grapefruit peel into thin strips, the thinner the better;

Start by rubbing the grapefruit peel with medium force until it becomes sticky. Rinse with clean water; repeat three times;

After rinsing for the last time, soak the pomelo peel shreds in light salt water for 3 or 4 hours, or even put it in the refrigerator overnight;

Rinse the soaked pomelo peel shreds again, put them into a small pot, add water and a little salt, and boil for about 10 minutes;

Take out, rinse and squeeze dry, set aside. The grapefruit peel that has been treated in this way has basically no bitter taste.

Use a food processor to smash the grapefruit meat. It doesn’t have to be too fine. It doesn’t matter if it’s a little coarse. (You can also crush it with a spoon without a food processor. It doesn’t take much effort.)

Put the chopped fruit pulp, grapefruit peel and rock sugar into a pot (stainless steel pot, glass pot, or casserole will work, just don’t use an iron pot), add a small half bowl of water (I added about 150ml);

Bring to a boil over high heat, then reduce to low heat and simmer slowly, stirring properly to avoid burning the bottom of the pot;

Simmer until the water is almost dry and the texture is thick, turn off the heat and let cool to room temperature;

Put it into a sterilized sealed container and keep it refrigerated. It can be eaten after three days. The longer the time, the less bitter it will be. Mine has a slightly bitter taste after three days, and the bitterness disappears after five days.
