Slaughter and process the fresh bullfrog, cut it into small pieces, and cut the green onion, soaked ginger, and soaked sea pepper into pieces.

Add cooking wine, salt and pepper to the frog pieces and mix well;

Add starch;

Add a little water to mix evenly and marinate for about ten minutes.

Heat the oil until it is 50% to 60% hot, put in the bullfrog;

Remove when cooked.

Pour off excess oil, soak ginger, sea pepper, bean paste, and sugar over low heat and saute until fragrant;
