Pickled fish
Overview
A dish that often appears on my dining table. Generally, restaurants use snakeheaded fish to make pickled fish, but I like to use fathead fish to make this dish. Firstly, the fish head can be used to make fish head with chopped pepper, and secondly, the price is relatively affordable. As long as it is processed properly, the pickled fish made from fathead fish is not much different from that made from snakeheaded fish.

Sauerkraut Fish Seasoning Pack, this seasoning pack is the one that finally stayed in my home after trying many brands. In addition to making pickled fish, this seasoning pack is also good for boiled pork slices

Fillet the fish into evenly thick fillets

Prepare an egg white

Pour the egg whites into the sliced fish, gently mix well, and set aside for later use

Chop the fish bones into small pieces

Add shredded ginger to the oil pan and stir-fry

Add fish pieces and stir-fry

Put the sauerkraut in the seasoning bag into the pot and stir-fry evenly with the fish pieces

Pour boiling water into the fried fish pieces to cover the fish body

Prepare seasoning packets

Put the seasoning packet into the fish soup and cook for two to three minutes

Slowly put the marinated fish fillets into the boiling fish soup

After all the fish is placed, cook for a minute or two. If there is any foam on it, use a spoon to scoop it off

Gently plate the fish, being careful to break the fish fillets

Prepare appropriate amount of peppercorns

Place the peppercorns and green onions on top of the fish soup

Pour the smoking hot oil on top (I like to hear the sound of pouring oil the most)😄
