Ingredients: wash carrots and cut into small pieces, mince ginger, onions, garlic, and peppers. Cut the chicken legs into as small pieces as possible.

Pour an appropriate amount of water into the pot, add a piece of ginger, and two pieces of green onion and bring to a boil. Add the chicken legs and blanch them, take them out, wash them and drain them. Set aside.

Wash and wipe off the water in the pot and heat it up. Add an appropriate amount of cooking oil and heat it until it is 60% hot. Add the chicken pieces and stir-fry until they turn slightly yellow.

Add green onions, ginger, garlic and chili and stir-fry until fragrant.

Add a tablespoon of soy sauce, a teaspoon of salt, and chicken essence and stir-fry evenly.

Add the carrots and stir-fry for a few times and turn off the heat.

Wash the rice and put it into the rice cooker. Add the fried ingredients into the pot and pour water to level with the ingredients.

Start the cooking function, stir it a few times and sprinkle with chopped green onion.

Simple and delicious in one pot. Chili is a personal preference, if you don’t like it you can leave it out.
