Simple version of Mapo Tofu
Overview
I say the simple version because I don’t make the Mapo seasoning myself. My siblings brought me a local specialty from a trip to Chengdu - Mapo tofu seasoning. Using this seasoning to make mapo tofu is quick and easy and tastes great. The spiciness is acceptable to the family. A delicious dish that goes well with meals.

Wash the tofu

Cut tofu into pieces

Blanch the tofu in a pot and drain the water

Chop onion, ginger and garlic

Heat the oil in a pan, add onion, ginger and garlic and stir-fry until fragrant

Stir-fried tofu

Stir-fried with mapo tofu seasoning

Add an appropriate amount of water, stir-fry evenly, cover the pot and simmer for a while, stirring frequently

After the tofu is seasoned, pour in water starch

Stir evenly, turn off the heat, serve and enjoy
