Sauerkraut and mandarin fish
Overview
Pickled fish is also a Sichuan dish and is also called sour fish in various places. It is made with fresh grass carp as the main ingredient and cooked with Sichuan pickles. Although this dish is a Sichuan folk home-cooked dish, it is widely spread. When I make pickled fish, I use sweet-scented osmanthus fish. The finished dish has tender meat. The soup is sour and delicious, spicy but not greasy. It is a perfect match with rice!

Mandarin fish, pickled cabbage, green onion, coriander, soybean sprouts

Remove the flesh from the sweet-scented osmanthus fish and marinate the cut bones with marinade for 5 minutes

Heat a pan, add oil, sauté ginger and garlic

Fry the fish bones for a while

Add sauerkraut and stir-fry evenly

Pour an appropriate amount of water

Add coriander, celery, and bean sprouts

When the vegetables are cooked until slightly soft, add the fish fillets. Do not leave them in the pot for too long
