Overview
Rice wine is called glutinous rice wine here in the north. It is made from fermented glutinous rice. It was also one of my favorites when I was a child. At that time, due to the limited financial conditions of the family, only when one was sick could one eat fermented eggs boiled in rice wine and added with egg drop. Nowadays, life has improved and I can eat endless rice wine, steamed buns and pancakes. I can eat enough to make up for the shortcomings of my childhood! And my son especially likes to eat rice wine steamed rice wine steamed buns. The faint aroma of wine combined with the sweet flavor of noodles can’t get enough! Today I made a rice wine shell steamed bun. I just changed the shape slightly. It looks very generous and pleasing to the eye. I would like to share it with everyone and wish you a good mood.

Put rice wine, water, fine sugar, all-purpose flour and yeast into a basin (because the thickness of rice wine is different and the water absorption of flour is different, please reserve an appropriate amount of liquid to avoid the dough being too soft);

Knead it into a smooth dough (I kneaded it for ten minutes on the third setting of the chef's machine);

After rounding, cover with plastic wrap and ferment until doubled in size;

Take out the dough and divide it into small pieces of about 70 grams each, and roll them into rounds (I made a total of 19 pieces of this recipe. If you can’t finish it, you can freeze it and eat it as you go. You can also cut it in half to make it);

Take a round dough and roll it into a long tongue shape;

Fold in half and press into strips;

Put it on the chopsticks and pinch the bottom;

Twist in a circle and complete each one in turn;

Put cold water into the pot and place it on the cage;

Cover the pot and let it rise for the second time for about 20 minutes (it just feels puffy to the touch);

Turn on the "trowel" function of the electric steamer for about 22 minutes, then simmer for a few minutes and take it out;
