Stir-fried Beans with Sliced Pork

The long white beans are better when fried than the green ones, and even better when braised.

I didn’t think of taking pictures until this step of preparing the ingredients. Crush and chop the garlic, and cut the pepper into small sections. Cut the pork into thin slices. Heat the pot, stir-fry the pork and add the garlic and chili pepper.

Stir-fry the garlic and chili until fragrant, add in the washed beans and stir-fry.

Stir-fry until the beans change color, then add an appropriate amount of water (do not cover the beans) and salt, stir-fry a few times with cooking wine and simmer over low heat.

Simmer over low heat. If you like it crispy, just simmer it for a while. If you like it chewy, simmer it longer. When the pan is heated, add a small amount of soy sauce and stir-fry evenly, then turn off the heat and serve on a plate.
