Preserved Egg Sausage

Prepare red pepper and onion

Chop small red peppers and green onions and set aside

Chop large radish strips or mustard and set aside

Prepare tofu

Cut the tofu into small pieces. Blanch it with boiling water.

Cool.

Put the tofu on the colander, and use a snack spoon to drain the tofu along the eye of the colander little by little, as shown in the picture (any method will work, as long as the tofu is broken up without big chunks)

Chop the preserved egg sausage

Add the reserved red pepper and chopped green onion.

Add the large root strips as well, add salt, sesame oil, pepper and other condiments, and mix well.
