Chocolate jelly cheesecake

Overview

Try adding chocolate to the cheesecake, it feels like a mousse! No wonder I couldn't find the recipe, so I made tiramisu and chocolate mousse. Maybe adding some vanilla would make it richer, but unfortunately I didn’t.

  1. First put 100 grams of biscuits in a plastic bag, use a rolling pin to chop the dough, add 35 grams of butter, and pour into an 8-inch removable bottom cake mold. Melt 40 grams of chocolate with some milk over water.

  2. Cut the cream cheese into small pieces, melt over hot water, add sugar and beat with a whisk until smooth.

  3. Pour the chocolate solution into the cheese and mix well.

  4. Beat the cream with ice water until stiff peaks form and the cream is almost stagnant.

  5. Heat the isinglass powder and melt it in water, mix it with cream and chocolate cheese, pour it into a mold, shake it on the table a few times to remove bubbles, and put it in the refrigerator for 1 hour.

  6. Heat and melt 30 grams of cream, 30 grams of milk, and 60 grams of chocolate. Add an appropriate amount of sugar to make chocolate ganache. Used as a chocolate mirror decoration.

  8. After 1 hour, pour the chocolate ganache into the cake that has been formed, and shake it on the table a few times to make the mirror surface smooth.

  9. Refrigerate for more than 4 hours or overnight. Production is complete.
