Wash a piece of chicken breast and a cucumber and set aside

Cut the chicken breast into strips and then into cubes

Put the cut chicken breasts into a bowl, add salt and cooking wine, stir well, add a little water and egg white, continue to stir well, then add starch, stir well and marinate for 10 minutes

Remove seeds from cucumber

Heat oil in a pan until it is 60 to 70% hot, add in diced chicken, break it up and set aside

Then use the remaining oil to blanch the cucumbers and set aside

Heat oil in a pan, add sweet noodle sauce and stir-fry until fragrant, add a little water, then add dark soy sauce, sugar and sesame oil and cook over high heat until thickened
