Potato Salad-from Late Night Canteen
Overview
If you’ve ever watched Late Night Diner, you definitely know this famous potato salad. Today's recipe is based on the steps in the show, with some differences of course - 1. I prepared the salad dressing anew, because the taste of the ready-made salad dressing I bought is really not flattering. Japanese salad dressing has a more mellow taste, so it is more delicious when eaten directly. However, the one I bought includes China's most popular Kewpie salad dressing. It is recommended that you make it in advance, which will add a lot of color to the dish. 2. The white onions used in the play should be relatively tender. Today I only have purple onions at home. If you don’t like the taste of onions, you don’t have to add them. 3. In the drama, the potatoes are boiled and peeled. I used the steaming method, which takes a shorter time to mature.

Take an egg yolk and add 3-4 tablespoons of salad dressing (mayonnaise). If you find it troublesome, you can just use the county version, but I think the taste is not rich and flavorful enough, so I made these adjustments myself.
