During this period, be sure to keep the fire high and keep the pot boiling. If you see that the water is no longer boiling, wait a while before adding the meat. (This will prevent the soup from being muddy and keep the soup very clear.) After all the meat is put in, continue to cook over high heat until all the meat strips float.
