Rice cake
Overview
Tired of eating steamed buns and steamed buns, I decided to change the ingredients for breakfast. It tastes better than bread and fried dough sticks, and it’s easier to make.

Take a bowl of ordinary rice, wash it, and soak it in pure water the night before. This process is called sizing. If the weather is hot, just put it in the refrigerator. The weather here is not hot, so it’s no problem to just put it in the kitchen.

The next morning, the rice was pulped and crushed by hand. The simplest handheld food processor I used was very convenient to use and it was ready in a minute or two.

Let a little settle for a while, otherwise it may be very thin. After it has settled, pour out part of the soup and don't throw it away. It will be very white when used to make bread or steamed buns. Add an appropriate amount of sugar to the remaining slightly thicker rice milk. If you don't like the sweet taste, you can omit it.

Add an appropriate amount of baking soda, I add about 1g. Depending on the amount of rice you use, usually the ratio of rice to baking soda is 100g:1. Then stir evenly and let it sit for 3 to 5 minutes.

Stir it a bit and the consistency of the rice milk will be like this, not particularly thick.

Brush the pan with a thin layer of oil and pour the rice milk evenly. If you want it to be thinner, you can pour a little more rice milk. You just have to master this yourself. Fry slowly over low heat,

Shake the bottom to make it jiggle, turn over and fry until cooked, then cut into three sections with a spatula.

I fried another egg. I wanted to make it into a shape, but I didn't put the mold in place. Fortunately, it didn't affect the taste. Fry the eggs over low heat and take them out.

Use preheat to stir-fry the shredded carrots and green onions, add some very fresh soy sauce, pepper, and oyster sauce to taste. If you want a heavy taste, you can add a little salt.

On the plate, wash and slice the green peppers, peel, wash and shred the cucumbers. Put the rice cake, eggs, green peppers, shredded cucumbers and shredded carrots into the plate respectively. Pair them with a bowl of rice porridge or milk. It is a perfect breakfast.
