Overview
Donkey rolling is a famous snack in Beijing. I saw the master making it, and I thought I had the ingredients at home, so I wanted to try it too! After reading a few recipes that all used the steaming method, I decided to give it a try using the microwave!

Take a large microwaveable bowl and add glutinous rice flour

Add cornstarch

Add sugar and 18 grams of salad oil, and use the rest to brush the silicone mat, etc.

Add an appropriate amount of water, I added about 180 grams, and mix it into a thin glutinous rice flour paste

Cover the lid and put it in the microwave on high heat for 2 minutes

After taking it out, use chopsticks to stir it evenly. Be careful of scalding your hands; put it in the microwave again for 2 minutes, take it out and continue stirring

After brushing oil on the silicone mat, place the glutinous rice balls on it and brush some oil on the dough

After covering the dough with plastic wrap, use a rolling pin to gently roll it into a rectangular shape

Spread red bean paste evenly on top

Roll it up with the help of a silicone pad, and then roll it up with the seam facing downwards

Use a sieve to sprinkle the prepared soybean flour evenly on top, turn over and sprinkle some more so that all sides are covered with soybean flour

Cut into small sections with a knife. It is best to apply a little oil after each cut
