High energy ahead! First, we rinse the outer layer of the purchased pig intestines. Then it is clear that an intestine has a thick end and a thin end.

Open the large end of the pig intestines to form a package. Then stuff the thin end into the large intestine bun.

Put one end of the large intestine bag on the faucet, and turn the entire large intestine inside out with boiling water.

Then the fat and dirt on the lining of the large intestine can be torn clean by hand.

This is the large intestine with its lining clean.

Repeat step 2 to turn the large intestine from the inside out.

Boil a pot of water and add ginger slices and vinegar.

After the water boils, add the intestines.

After the water boils again, the intestines can be removed. Rinse with cold water and make sure there is no mucus on the surface. The cleaning process is complete!

Cut the large intestine (drain the water) into small pieces, stir-fry in a pan, add ginger slices and star anise.

Then add dark soy sauce and 1-2 bowls of water and start simmering. If you want your intestines to be al dente, this process only takes 15-20 minutes. If you need a softer texture, it will take 40-60 minutes.

Drain the sauerkraut and cut into thin strips.

Put the garlic in the oil pan and stir-fry together with the sauerkraut. Season with salt, wine and sugar during this period.

Pour in the braised pork intestines, stir-fry for another 2 hours and serve.
