Chop the pork chops into pieces, clean them, blanch them in a pot under cold water, remove them and wash away any foam.

Drain off the water.

Ginger, garlic, star anise, cinnamon, Sichuan peppercorns, dried chili peppers, and rock sugar are set aside.

Fold the green beans into segments and peel the potatoes.

Put oil in the pot, add the spices and stir-fry over low heat.

Add the pork ribs, add cooking wine, light soy sauce, and dark soy sauce and stir-fry until browned.
