Wash the chicken wings and drain

Prepare onions, ginger, garlic, star anise, Sichuan peppercorns, and dried chilies

Put the chicken wings into a container, add one spoonful of cooking wine and two spoons of light soy sauce and marinate for 15 minutes

Heat the pot, pour in an appropriate amount of oil, add onion, ginger, garlic, star anise, and peppercorns and stir-fry over low heat until fragrant (I originally wanted to add dried chili peppers, so I omitted them because the children would eat them)

Add chicken wings and fry over medium-low heat until golden brown on both sides

Pour enough water to cover the chicken wings, add rock sugar and bring to a boil over high heat

Turn to medium to low heat, cover the pot and simmer for about 20 minutes

Reduce the juice over high heat and add a little salt to season before serving

Sprinkle with chopped green onion and serve~
