Wash the beef and cut into chunks.

Put cold water into the pot and pour an appropriate amount of cooking wine, three pieces of ginger and two or three green onions.

Prepare the seasonings, garlic, ginger, and scattered Sichuan peppercorns (you can add more if you like numbness), pepper segments, bay leaf, cumin, angelica, angelica and star anise (I don’t have city bark and cinnamon, add it if you have).

After boiling, scoop out the beef and wash off the foam. Take out two or three bowls of the water used to cook the beef.

If the stock is not enough to cover the beef, add beer or boiling water.

Cover, bring to a boil, reduce heat and simmer for 90 minutes.

Add the chopped potatoes and simmer over low heat for 20 minutes.

Before serving, add a spoonful of chicken essence and mix well. Add some coriander and put it on top.
