Prepare all materials.

Finely chop onion and ginger.

Cut eggplants and potatoes into hob pieces, and cut green, red and yellow peppers into triangular pieces.

Add oil to the pot and heat over high heat.

When the oil is hot, add the eggplant. Fry the eggplant until cooked and remove the oil.

Pour the potatoes into the oil, fry until the surface is golden brown, remove and control the oil.

Pour the green, red, and yellow peppers into the oil, fry for a few minutes, and drain to control the oil.

Place all ingredients except vegetable oil in a small bowl and mix into sauce and set aside.

Pour out the oil in the pot, leaving the bottom oil, and over low heat, add the minced onions and half of the minced garlic and saute until fragrant.

Pour in the eggplant, potatoes, green, yellow and red peppers and stir-fry over high heat for a few times.

Quickly pour in the sauce and stir well.
