Chongqing Cold Noodles

Put the noodles in order.

Put cold water in the pot and steam the noodles for 2 minutes.

When the water is boiling, cook the steamed noodles until just off the raw surface and take them out. Shake the noodles out and keep blowing them with an electric fan to cool them.

Add rapeseed oil, mix well, and shake to spread the dough.

Wash the ginger and garlic and grind them into puree. Wash the scallions and cut into chopped green onions. Add all seasonings to the bowl and mix well.

Wash and cook mung bean sprouts.

Place the cold noodles on a plate and top with the mung bean sprouts. Pour the dressing into the dish and mix well. Sprinkle with chopped green onion and serve
