Minced Pork and Long Cowpeas
Overview
I ordered minced pork and cowpeas once in a restaurant, and I felt that this recipe was very suitable for me! Because I'm lazy, this doesn't require any knife skills, just snap the cowpea into two pieces. I plan to try it myself when I get home! The minced meat is chopped by myself and marinated, so it is very flavorful when fried! I don’t use the restaurant method of frying cowpeas. Firstly, it’s a waste of oil, and more importantly, deep-frying is unhealthy! Nowadays, this healthy concept of less oil and less salt has been deeply ingrained in my family. If it is not salty enough, the old man will complain to me, hehe! But they also do it for your own good, right? Just listen and do as you are told! Wow, I'm off topic. I don't need to fry the beans. I'll give you a good way. That is to use a microwave to soften the cowpeas first, and then fry them with minced meat. This method is really no different from the ones fried in restaurants. It's very delicious and will be a killer addition to meals. This time I used the vegetable gift box provided by Cuipuyuan. The gift box included bitter melon, eggplant, cowpea, pepper, celery, bell pepper, and zucchini. The cowpea was very fresh and tender, and tasted great when cooked. The ecological fruit and vegetable base located in Yaoling Village, Changshaoying, Huairou, produces more than 500,000 kilograms of organic vegetables annually, grows more than 30,000 organic grapes, and breeds more than 100,000 selenium-rich black pheasants in free-range farming. The scale is really spectacular!
