Braised hairtail fish
Overview
Because my family’s taste is a bit heavy, I generally like braised hairtail. This braised hairtail fish has crispy skin and tender meat. It’s slightly spicy and sweet and sour, so it’s a great dish to go with rice.

Wash hairtail and cut into sections.

Add cooking wine, shredded ginger, salt, and red pepper to marinate.

Wash and cut the ingredients, put soy sauce, vinegar, sugar and water in a bowl and set aside.

Rinse the pot, heat the oil, and slowly fry the hairtail fish pieces until both sides are browned. Fry them all and put them on a plate for later use.

Leave a small amount of oil in the pot, add minced ginger, garlic and red pepper and stir-fry until fragrant, then add the fried hairtail,

Pour the sauce into the bowl and let it simmer for a while, sprinkle with scallions and add some MSG.
