Cut the beef tenderloin into thin slices, add salt, cooking wine, light soy sauce, water starch and mix well, then add vegetable oil and mix well to lock in the moisture.

Tear the eggplant into small pieces, add salt and rub until soft, rinse with water and squeeze dry.

Cut the enoki mushrooms into sections, cut the okra into small sections, chop the garlic cloves and shallots and set aside.

Heat oil in a pan, add beef and stir-fry until it changes colour.

First add garlic, shallots and eggplant and stir-fry.

Add enoki mushrooms and okra and stir-fry evenly, add a little water and cook for 2 minutes, add a little oyster sauce to taste.
