1. Wash the radish, first cut into chopstick-thick slices, then cut into chopstick-thick continuous strips, hang on cotton thread, and dry in a ventilated place for 4 or 5 days.

Wash off the dust with warm boiling water, squeeze out the water, and shake it loose; add salt and a little white wine and mix well, then mix in chili noodles, pepper noodles (if you are afraid of the numbing smell, use a small amount of peppercorns instead), sesame seeds (you can also sprinkle it directly when eating), and a little sesame oil. Mix well and put it into an earthenware jar (it must be filled and compacted by hand).

3. Seal the mouth of the altar tightly with plastic wrap (use several layers) and cotton thread, cover the altar lid, and place in a cool place for 10 days.
