Ferment until doubled in size, remove and deflate, divide into 9 equal parts, roll into balls, cover with plastic wrap and rest for 15 minutes.

Shape the other dough in the same way, place it with the seams facing down and place it on a baking sheet lined with oil paper for secondary fermentation.
