Pork belly cut into cubes

Pour the pork belly into a pot with cold water, add ginger slices and cooking wine and blanch the juice

Remove the pork belly and drain, put it directly into the pot and stir-fry until oil comes out

Remove the pork belly, leave the lard, add rock sugar and fry over low heat until caramel color appears

Add the pork belly and continue to stir-fry until browned

Add scallions, star anise, and dried red pepper and stir-fry until fragrant

Add soy sauce and dark soy sauce and stir-fry evenly. Pour in appropriate amount of water. Bring to a boil, then reduce heat to low and simmer for 40 minutes. Add salt and chicken powder, then reduce to medium heat and simmer until the soup thickens.
