The jujube cake I made last time was a bit hard, so I found another recipe and it turned out very well.

Soak the red dates for a while, remove the core and chop them, then use a food processor to pulverize them.

Add milk, mix well and soak for 2 minutes.

Heat over low heat, pour brown sugar and salt into the chopped dates, stir until melted, and let cool.

Beat the eggs into the chopped dates.

Use the electric egg beater to beat at high speed for about 6 minutes. Lift the egg beater and the egg batter will slowly fall down.

Mix low-gluten flour, aluminum-free baking powder, and baking soda, pour into the brown sugar mixture, stir, and preheat the oven to 150°C.

Pour in the corn oil and stir.

Pour the red date paste into a mold lined with oil paper, shake it lightly a few times, and bake at 150°C for 45 minutes in the middle and lower layers of the oven.
