Peel the pumpkin and cut into thin slices and steam until mashed

Add water, stirring the batter with chopsticks while adding it. The amount of water depends on the state of the batter, because the moisture content of each pumpkin is different.

The batter needs to be in this state so that the puff pastry has good fluffiness. It will not work if it is too thin or too thick.

Line a grinder with oiled paper or a basket cloth (mine is an eight-inch square baking pan, any container that can be steamed will do). Dip your hands into water and smooth the surface to ferment until doubled in size.

After fermentation, put the red dates in a pot with cold water. After the water boils, steam for about 35 minutes, then turn off the heat and simmer for 5 minutes.
