Overview

Last week, I brought some prunes from relatives at home, which reminded me of the days when I was in Jiaojiang. I would eat Linhai wheat pancakes every now and then. It could contain pork fillings, potatoes, prunes, green onions, cold rice, and you could also fill it with an egg. Then you could go to the movie theater and sit down to eat the wheat pancakes, or you could buy some yogurt from the Century Lianhua next door to go with it~~~

  1. First, pour the flour into boiling water, knead it into a hot dough, let it rest for ten minutes, then divide it into two parts, and roll each into a dough sheet.

  2. Chop the pork, add some salt, light soy sauce, corn starch, and pinch it a few times.

  3. Soak the prunes for three to four hours in advance, then press them in a pressure cooker for 35 minutes, drain and chop. Put some oil in the pot, stir-fry the prunes, and add some sugar and light soy sauce halfway through.

  4. Cut the potatoes into small pieces and steam them in a steamer for 20 minutes. After taking them out of the pot, add a small amount of salt and appropriate amount of black pepper, then crush them slightly with a spoon and mix evenly.

  5. Roll out the dough larger and thinner, and put the fillings in. As long as it can fit, put more fillings, it will taste better.

  7. Pour some oil into the pan and fry the cake over low heat until golden brown on both sides. If you want something more delicious, use chopsticks to poke a hole in the cake, lift the dough with chopsticks, pour the eggs in, and fry both sides, the taste will be even better~~~
