Pea yellow
Overview
Pea yellow is a traditional snack in Beijing. The finished product is yellow in color, delicate and pure, melts in your mouth, tastes sweet, cool and refreshing. My children like to eat it, so I will often make some, especially using a stew pot, which is very convenient for simmering a pot of noodles and peas. When I first made it, I would also add agar agar or gelatine.

Soak dried peas in water overnight

Peeling is a task that requires patience. It took me more than an hour. Students who don’t want to peel can buy peeled peas

Put the peeled peas into the stew pot and bring to a boil, simmer for four hours, take out the stew pot again, heat over the fire and continue to simmer until the peas turn into puree when pressed

After simmering, wait for it to cool down slightly, then put the peas into a food processor and puree them

The more times you beat, the more delicate the finished product will be, the better the taste

Pour the pea puree into a non-stick pan, add sugar and stir-fry

Fry until the water is basically gone

After the pea puree has cooled, fill it into the mold and press it flat
