Overview
I am used to eating all kinds of sweet noodles, and suddenly I want to try the simple, nutritious hard bread that gets better and better the more you chew it. I happened to find some oatmeal left at home. I suddenly had a whim. I didn’t expect that it tastes good. The oatmeal powder can also be replaced with walnut powder, black sesame powder, corn flour, etc.

I have some raw oatmeal at home. I thought about it and ground it into powder. Here it is sifted

Prepare the ingredients. For the soup, use 25 grams of high-gluten flour and 100 grams of water. Stir evenly without any particles. Stir it in the microwave on high heat for one minute. Take it out and seal it with plastic wrap (to prevent moisture loss). Refrigerate it for 1 hour and set aside

Pour 1/3 of the flour mixture and yeast in step 5 into the batter in step 4

After kneading it evenly, transfer it to the bread machine (this reduces the loss of the bread machine)

Start the kneading function for 20 minutes. Take a small piece of dough and a thick film will appear

Take a clean basin, apply a few drops of salad oil on the basin, put the dough in, cover with plastic wrap, and ferment at 30 degrees for about 50 minutes. The dough will ferment until it is 2 to 2.5 times its original size. Dip your fingers in dry flour and insert it into the dough. If the holes do not shrink immediately, it will become a basic fermented dough

Take out the dough, deflate and weigh the total weight

Divide the dough into 6 equal portions with a scraper, roll each into a round shape, cover with plastic wrap and let rest for 10-15 minutes

Take out a small piece of dough and roll it into an oval

Roll it up with both hands from top to bottom, while rolling it up and tucking it toward the middle. After rolling it up, pinch the opposite side to tighten it, and then turn it around to complete the shaping

Place in a baking pan for secondary fermentation

When the dough has risen to double in size, sift dry flour over the surface and make 4 slits with a sharp knife

Preheat the oven to 180 degrees and bake at 165 degrees for 18 minutes
