Caesar Bread
Overview
Caesar means emperor in German, so Caesar bread has a noble, majestic and imposing feeling. Caesar bread has the shape of a pinwheel, and special equipment is needed to make the shape of the pinwheel. I didn’t have a mold, so I followed the teacher and learned to use the braid method to make the shape of the pinwheel. Caesar bread is usually served with sesame seeds, ham, bacon and other ingredients. This bread is crispy on the outside and soft on the inside, with less oil and less sugar.

Preparation of medium-sized dough: bread flour, yeast powder.

Mix the water and yeast powder evenly, then add it to the bread flour, stir it into a ball with chopsticks, cover it with plastic wrap and refrigerate it overnight.

Preparation of the main dough: The ingredients include medium-sized dough, milk powder, bread flour, whole wheat flour (bread flour and whole wheat flour have been mixed), sugar, salt, and butter.

Prepare black sesame seeds for surface decoration.

Mix the medium-sized dough, bread flour, whole wheat flour, sugar, and milk powder until it forms a dough, add salt, and continue the dough mixing process.

When the dough becomes chewy, add butter and continue kneading.

When the dough is kneaded into a state that can be pulled out of the glove film, take it out and shape it into a round shape, and place it in a basin in a warm place to ferment for about 2 hours. I use room temperature fermentation, so it takes a long time.

After 2 hours, when the dough has doubled in size and is filled with air, press it with your hands to create an obvious pit.

Fully deflate the dough, divide it into 6 small pieces of dough, roll into balls and let rise again for 20 minutes.

After 20 minutes, take out a small piece of dough and roll it into a rectangular shape, making the bottom edge thinner.

Roll up from top to bottom into a long strip and twist slightly to make it longer. Do the same with the rest of the dough.

Let the long strip of dough rest for a few minutes and then roll it out again.

Wrap the long dough around your hands and make it into a circle. Pass one of the heads around the circle and slowly make it into a wreath shape. After gathering the two ends, arrange it into a pinwheel shape.

Spray or brush the surface of the bread dough with water, then dip it in black sesame seeds, place it on the baking sheet, and continue to rise for 60 minutes. Preheat the oven to 195 degrees for upper heat and 185 degrees for lower heat. After preheating is completed, put the bread dough into the oven and bake for 18 minutes. After the surface is evenly colored, turn off the heat and let it cool.
