Steps
-
Weigh 200 grams of flour, slowly pour in hot boiling water, stir quickly with chopsticks to make the flour evenly scalded, and add 30 grams of cold water.
-
Let cool until not hot, knead into a smooth dough, and rest for 20 minutes.
-
Sprinkle dry flour to prevent sticking, and roll the dough into a thin and even rectangular sheet, about 3 mm thick.
-
Spread lard evenly.
-
Sprinkle salt, pepper and green onion evenly.
-
Roll up the dough from left to right.
-
Roll into a long strip and pinch tightly to close.
-
Divide into equal portions with a sharp knife.
-
Use your hands to pinch both ends together toward the middle.
-
Form into a ball shape, try not to expose the chopped green onions.
-
Do everything and relax for 10 minutes.
-
Roll the dough into a round cake about 3 mm thick.
-
Grease the pan with oil, heat over low heat, and add the cake base.
-
Fry until the surface is slightly brown, then turn over and continue frying until the surface is slightly brown, the middle is bulging, and the aroma of green onions is wafting out. For a crispier texture, apply a thin layer of oil on the surface of the pancake and fry until golden brown.
