Overview
It is good to use your own Sichuan pickles, red radish, cabbage, and red pickled peppers. Hot and sour, appetizing, crispy in texture, bright in color and fragrant in aroma. Fried sweet potato starch can be used as a staple food or as a side dish.

Soak a roll of sweet potato starch for about half an hour or more

Marinate the shredded pork with shredded ginger, dark soy sauce, light soy sauce, and cooking wine for half an hour, and then wrap it in cornstarch 5 minutes before putting it in the pot

Shred kimchi

Heat the wok, heat the oil until it is 7 minutes hot, add the shredded pork, break it up and serve it out.

Pour the oil again, stir-fry the garlic slices, shredded ginger, and a spoonful of bean paste over low heat until fragrant.

Add the kimchi and stir-fry, then remove the sweet potato starch and add it to the pot.

Stir-fry evenly, add one spoon each of dark soy sauce, balsamic vinegar, and 2 spoons of light soy sauce. Add some boiling water and cook for about 6-8 minutes. The sweet potato powder will be cooked.

Then add the shredded pork, stir-fry quickly and evenly, sprinkle with pepper, and serve immediately.
