Wash the coriander and red pepper, peel the garlic and cut the green onion into sections and set aside.

Wash the dried red pepper, boil it in water for a few minutes, soak it for another ten minutes, then cut it into small pieces and slice the ginger.

Kill the chicken, wash and chop into small pieces.

Pour the chopped chicken pieces into the cooking pot, boil for 5 minutes, remove the chicken and drain it, and set aside.

Pour camellia oil into the wok, add ginger slices and stir-fry until fragrant, add chicken pieces and stir-fry over low heat. Stir-fry until the chicken is golden brown and the edges of the chicken are slightly charred, then turn off the heat and cover the pot and simmer for ten minutes.

Pour the fried chicken out of the pan and leave the oil in the pan. After it is hot, add the chili pepper segments and stir-fry the green onion segments to create a spicy flavor.

Add the chicken pieces and dried red pepper segments and stir-fry over low heat until the chicken is dry and smells spicy.

Add salt, soy sauce, and stir-fry over high heat until flavourful. Add the chopped garlic cloves, stir-fry a few times, turn off the heat, and finally sprinkle in the coriander segments.
